Today I’m sharing one of our favourite slice recipes that my dear friend Amelia made for me many years ago. I always have these ingredients in my pantry so it can be made at the drop of a hat and I love that I can easily make it gluten free too if I need to cater for that. Passionfruit slice

 

Base
125g butter
1 cup (200g) SR flour (can use Gluten Free flour)
1 cup (80g) coconut
1/2 cup (100g) castor sugar

 

Topping
1 tin (400g) sweetened condensed milk
1/4 cup (60ml) lemon juice
1 small tin Passionfruit pulp

 

Base method:
1. Pre heat oven to 180 degrees C
2. Line a 20cm square pan with baking paper
3. Combine melted butter, flour, coconut, sugar and mix
4. Press into prepared pan
5. Bake for 10 mins then cool for 5 mins before adding topping

 

Topping method:
1. Combine sweetened condensed milk, Passionfruit pulp and lemon juice & poor over cooked base
2. Bake for a further 10 mins or until set
3. Cool completely then refrigerate
